- ½ French baguette, approximately 6 oz
- 4 tablespoons apricot jam or preserves
- 2 tablespoons Dijon mustard
- 4 oz ham, preferably Black Forest variety
- 4 oz Brie, sliced into ½ inch pieces
- 1 cup arugula
Instructions
- PREP OVEN AND BRIE: Set the oven to broil and position a baking rack 6 inches from the broiler. Allow the Brie to set out and come to room temperature.
- SLICE BAGUETTE: While the oven is preheating, use a serrated knife to slice the baguette widthwise into two equal halves, then cut each of the halves in half lengthwise.
- ADD MUSTARD, JAM AND HAM: Spread the Dijon mustard on the bottom halves of the baguette and the apricot jam on the top halves. Layer the ham on to the bottom half of the baguette.
- BROIL: Put the two halves of the baguette onto a baking sheet and place the baking sheet into the oven. Broil for 3 minutes until ham is warmed through and jam is bubbly watching closely so the bread doesn’t burn.
- ADD BRIE AND ARUGULA: Remove the baguette halves from the oven and layer the top half with the brie and the bottom half with the arugula. Carefully place the top half of the baguette onto the sandwich and serve immediately for best flavor.
