Ingredients
Scale
- 2 ciabatta rolls, sliced lengthwise
- 2 firmly pressed cup of kale, chopped
- 1 tablespoon olive oil
- 1 tablespoon balsamic vinegar
- pinch of salt
- pinch of pepper
- 8 oz halloumi, cut into ¼ inch slices
- 1 cup Olive Pesto
Instructions
- PREPARE CIABATTAS: Lightly toast the ciabatta. White the ciabatta is toasting, continue with the next step.
- PREPARE KALE: In a medium bowl add the kale, olive oil, balsamic vinegar, salt and pepper. Use your hands to massage the kale for one minute until evenly coated in the other ingredients and slightly softened.
- ASSEMBLE AND SERVE: Once ciabattas are toasted, divide the kale on top of the two bottom halves. Then layer with half of the halloumi slices. Spread half of the olive pesto onto each of the top pieces of ciabatta. Then carefully place the top slices onto the sandwich. Press down gently to meld the ingredients together. Serve immediately.
